I've been raving here the last 2-3 months about an online event called The Gluten Summit in which 29 doctors and researchers from around the world presented the latest information about gluten and the problems it causes. The Summit is now over, but the information is still available. I'm leaving up the paragraph below for awhile longer in case you want to do your own investigating. You can also check out this blog post for more info about the follow-up webinar which gives invaluable help to those who want to know more about getting tested and healing the gut.

THE GLUTEN SUMMIT
Doctor and researcher Dr. Tom O'Bryan has put together 29 of the world's foremost researchers, doctors and nutritionists and is presenting interviews with them and their respective topics in an online summit through Nov. 17. I have been listening every day and am absolutely astonished at the information! Everything from healing the gut with colostrum to how and why GMOs intersect with gluten intolerance and leaky gut - to how gluten intolerance is often responsible for Alzheimer's, schizophrenia, autism, and even heart disease! I learned that gluten is not digestible by 100% of humans - and that only specific testing can illuminate its connection to these diseases because gluten intolerance is NOT just a gut disorder .... I could go on and on. This information is absolutely vital! On this site you will find gluten-free baking tips, information about Cenote Austin, health-related information, much of which is specifically related to diet - including why I bake and eat without GMOs (and why I detest them), as well as a blog about gluten-free stuff, book reviews, friends, etc. etc.
Some say it's a fad, but if you love someone who has celiac or know anyone who throws up whenever they eat wheat, you know it's vital to avoid gluten. Count me in that group. My gluten-free baked goods have made their way into the retail realm. On this page you'll find gluten-free baking tips, recipes, and a link to my favorite local vendor and coffee shop, Cenote. You'll also find a couple of helpful articles like this one about the dramatic improvement of a 75-yr-old Parkinson's patient after being on a gluten-free diet for 3 months.
This page contains links to articles about GMOs (genetically-modified-organisms) and other threats to our health. So many it's hard to keep up.
Since the defeat of California's labeling law/proposition, several other States are now seriously looking at the issue of labeling. It's hard to believe that Monsanto et.al's deep pockets could influence anyone's desire to actually know what's in their food, but yes, they did just that in California. We can only hope that as more and more people become informed, a tipping point will be reached that will trump the idiocy promoted by Monsanto, Syngenta, Archer-Daniels-Midland, etc. and that labeling laws will ultimately allow us all to know which foods are (effectively) poison and which are not.
