Sippie's Studio started in 2012 as a gluten-free bakery serving Cenote Cafe in Austin, Texas. I retired from Cenote in 2016, and I now put my energies toward supporting those who are trying their best to improve their health using diet and nutrition. Because I've been there myself and know how difficult it can be, I like to think I can help you or your loved one plow through the difficult transitional phase of removing gluten from your diet. This site exists to offer help and support in making that transition.

The numbers are increasing.... gluten sensitivity affects millions of people now worldwide - but only a small fraction are affected by gut disorders.  There is much to learn, and if you've landed here, you are probably already aware that removing gluten from your diet is essential to relieving symptoms of disease, a first step toward resolution of chronic illness.  But it's hard to do... we are all addicted to wheat (food manufacturers have played a role in that addiction since the late 50s).  If you are like most people, you honestly believe that cheating now and then won't hurt anything, but nothing could be further from the truth.  As my mentor, Dr. Tom O'Bryan, likes to say, "just like you can't be a little bit pregnant, you can't eat just a little bit of gluten."  You simply must remove the offending proteins from your system so your body can heal.  The science is clear.
 
   To understand that science, I urge you to research Dr. O'Bryan, an M.D. who has made it his life work to research gluten problems. In November of 2013, he hosted an online summit interviewing 28 medical professionals about their research into this growing problem.  He followed up the summit with a webinar outlining some first steps to take if you are not getting the support you need from your doctor or finding the right lab to do the right tests (conventional labs test for only one or two types of gluten proteins when in fact, there are over 50 with more being identified all the time.)  If you would like to know more, please visit this blog post for more info about Dr. Tom's summit as well as the follow-up webinar which gives invaluable help to those who want to know more about getting tested and healing the gut.

    While you're at it, give up the pesticide-laden non-organic foods as well.  Why?  Please read "Why the Use of Glyphosate in Wheat has Radically Increased Celiac Disease."   Glyphosate is a poison, recognized as a carcinogen by the World Health Organization. The U.S. is one of the few countries that promotes, supports and even subsidizes its use.

    You CAN live without wheat.  My family has lived without it for almost fifteen years now, and we are much healthier for it.  It's my sincere desire to help you make the transition to eating the right way, the way to support your health.

       Some say it's a fad, but if you know or love someone who throws up whenever they eat wheat - or develops hives or acne or psoriasis, some of the more obvious symptoms of gluten-intolerance, you know it's vital to stop the gluten. But oh, those cravings! How do you get there?  On the Gluten-free Baking page you'll find gluten-free baking tips and flour mix recipes for various types of baked goods.  You'll also find a couple of helpful articles like this one about the dramatic improvement of a 75-yr-old Parkinson's patient after being on a gluten-free diet for 3 months.

       This page contains links to articles about GMOs (genetically-modified-organisms) and other threats to our health, too numerous to mention here.  You will find a lot of the articles are over two years old. Truth is, so much information exists now, I just can't keep up, though I do add to them now and again and will be sure to point you to them in a blog post when and if the information is new.
